This is a recipe that came with a waffle iron, except I always separate the eggs and fold the egg whites back into the batter as outlined below for better waffles.
- Mix following ingredients well in a bowl. (Can be premixed and stored for use in advance.)
- 1¾c flour
- 2t baking powder
- 3t sugar
- ½t salt
- Separate the whites of three eggs and beat egg whites until soft peaks form. Place egg yolks in bowl with dry ingredients.
- Add the following to dry ingredients and yolks bowl and mix well.
- 1½c milk
- ⅓c vegetable oil
- Fold egg whites into batter before cooking.
