This recipe can be made with a variety of ingredients, depending on what is available in a kitchen. Beware adding too much tomato and onions, as these will bring excess water to the dish.
- Crush smoked salmon into small flakes and set aside on plate.
- Mix the following into a bowl, then blend lightly.
- 2 large eggs.
- Small amount of lemon juice. This prevents the eggs from sticking, though too much lemon juice results in too fine a texture.
- Diced roma tomato.
- Diced garlic and shallots.
- Shiitake mushroom (椎茸).
- Minced fresh herbs such as basil, lemon thyme, and majoram.
- Milk and cheddar cheese.
- Salt and pepper to taste.
- Bring small amount of water to boil in a double boiler, then reduce heat to low.
- Fill double boiler bowl with small amount of olive oil, then add the egg mixture.
- Cook uncovered, stirring occasionally until cooked. Near end of cooking, mix in the smoked salmon.
Before serving, top with additional fresh herbs and a dash of sea salt.
