Eggs with Salmon

This recipe can be made with a variety of ingredients, depending on what is available in a kitchen. Beware adding too much tomato and onions, as these will bring excess water to the dish.

  1. Crush smoked salmon into small flakes and set aside on plate.
     
  2. Mix the following into a bowl, then blend lightly.
     
  3. Bring small amount of water to boil in a double boiler, then reduce heat to low.
     
  4. Fill double boiler bowl with small amount of olive oil, then add the egg mixture.
     
  5. Cook uncovered, stirring occasionally until cooked. Near end of cooking, mix in the smoked salmon.

Before serving, top with additional fresh herbs and a dash of sea salt.
