Unhealthy but very tasty oatmeal cookies, recipe from my mother. One adaptation is to replace the coconut with chocolate.
- Preheat oven to 375˚F.
- Mix following ingredients well in a sealable container. (Can be premixed and stored for use in advance.)
- ¾c flour
- ¼t salt
- ½t baking powder
- ½t cassia cinnamon (heaping)
- ¼t allspice (heaping)
- ¼t ginger (heaping)
- 1c oats
- In a bowl, combine the following agents of tooth decay and artery clogging.
- ½c white sugar
- ½c brown sugar
- ½c melted butter
- 1t vanilla
- 1c coconut (sweetened)
- Add the contents of the sealable container into the bowl with 1 egg, and stir until the mixture has become a sticky mass of wholesome cookie dough goodness. Snacking advised.
- Spoon dough onto greased cookie sheet.
- Cook until just done (9-11 minutes?).
- Store resulting cookies in airtight container to prevent them from drying out.
